Winter take on Canadian Lobster Cannelloni of Nova-Scotia lobster, asparagus ,wild mushroom, proscuitto crudo, Yuzu, vanilla, saffron coulis.
House spring roll of duck confit Roasted mango, orange, tamari and organic honey reduction, a different take on regional cold slaw.
Foie-gras like no other... Deep fried marinated foie-gras with foie-gras tartare from Champs d’Élise of Marieville Pear chutney «à l’ancienne» with gooseberry and lavender.
